This is a classic green tea from an organic plantation in Anhui, China. The mellow infusion has an herbaceous character reminiscent of the misty mountains near the Yangtze River.
Ingredients: Chinese green Tea
2-3 infusions
Instructions: 1 rounded tsp, 3 min in 8 oz of 175ºF filtered water.

A few of our teas taste fantastic over ice. This is one of them! It's a lot of fun to add a kick of fruit, coconut, lemon, lime, herbs or ginger to this tea. Below you will find instructions for a single serving of iced green tea and a recipe for Homemade Ginger Green Tea Syrup. Add the syrup to club soda or to a shaken cocktail.
Iced Green Tea:
2 tsp Mountain Monk Green tea
1 1/2 cups ice cubes
8 oz filtered water
Sweetener (optional)
Boil the water. Add 1-2 ice cubes to the water to cool it down. Add the tea leaves to the hot water in a pyrex measuring cup and steep for 3 minutes. Add the sweetener if desired. Strain and pour it over the ice in a pint glass.
Homemade Ginger Green Tea Syrup:
16 oz 175ºF filtered water (bring to boil, then cool with ice cubes)
4 rounded teaspoons Mountain Monk Green Tea
16 oz cold filtered water
2 cups sugar
Pinch of salt
8 oz chopped and peeled ginger
Instructions:
1) Add green tea to the hot water and steep for 3 minutes. Strain into a small nonreactive saucepan.
2) Add 16 oz cold water, sugar, salt and ginger.
3) Bring to a boil, reduce heat, then simmer for 45 minutes - 1 hour.
4) Allow to cool. Strain the syrup. (The cooked ginger can be used for baking.)
5) Boiling yields a golden color from the ginger and green tea. This syrup will keep in the refrigerator for a couple weeks. Use it to sweeten club soda, fresh squeezed lemonade or for a Mar-tea-ni!
